With half of the country under a blanket of heat and humidity that isn’t expected to let up anytime soon, few apartment dwellers feel like turning on their oven for a home-cooked meal. With rent to pay, though, eating out isn’t always an option - even if the heat index is in triple digits. Here are some great dinner options that don’t require rubbing two sticks together.
- Pasta Salad. Usually considered a side dish, beef up your pasta salad with meats, proteins, fruits and vegetables. You can buy everything pre-prepared at the grocery store (you may have to boil water for the pasta, though). Go easy on yourself and buy a bottled salad dressing in a yummy flavor. The best part is that, generally, pasta salad will keep for a handful of days, meaning you’re covered for days to come. (A fav: pasta, chicken cubes, pineapple, mandarin oranges and cashews in an orange-ginger salad dressing. Yum.)
- Fruit Stand Attack. Even if you aren’t a big fruit and veggie person, you’ll be amazed at what your local farmer’s market or fruit stand has to offer this time of year. Pair your favorite with some bread, and you are set. Find local farmer’s markets and fruit stands here.
- Caprese. Who can beat fresh, vine-ripened tomatoes, fresh basil and buffalo mozzarella with a spray of olive oil? All you need are a fork and knife.
- Smoothie. Cool down with a loaded up smoothie. Add protein power and you have a satisfying and healthy meal option.
- Breakfast for Dinner. Who doesn’t love breakfast? Yogurt, cereal, granola. Why limit consumption of these delicious treats to the a.m. hours?
